His dishes highlight the Cretan cuisine and the premium ingredients of the region (cheese, legumes, fresh seafood and meat) with a modern spirit, imagination and a mood for experimentation, and alternate depending on the season and its products. The desserts made by a dedicated pastry chef and the cocktails with Cretan ingredients complement the picture.
