On the particularly elegant, urban-style verandah of the iconic “Poseidonion Grand Hotel,” Chef Stamatis Marmarinos presents a very personal, contemporary Greek cuisine. He does so by deconstructing traditional recipes of the island and looking for ingredients in the hotel’s farm and the area’s small producers. Greek Cuisine Award 2018. The dishes that stand out: Greek salad with tomatoes and strawberries; grouper with vegetables, mayonnaise, and bottarga; and grouper with artichokes in egg-lemon sauce.
